 Crispy Potato Pancakes 
 
 
 Makes 12 servings 
 
 
 Serving Size: 1 pancake 
 
 
 A dollop of sour cream or applesauce is all you need to top these tasty pancakes. 
 
  4 large baking potatoes, (about 1 pound), peeled and shredded 
 
  1/2 cup milk 
 
  1/4 cup all-purpose flour 
 
  1/4 cup finely chopped onions 
 
  2 tablespoons finely chopped 
 
  parsley 
 
  1/2 teaspoon salt 
 
  1/4 teaspoon pepper 
 
  1 egg 
 
  2 to 3 tablespoons vegetable oil 
 
  1. Mix all ingredients except oil until well blended. 
 
  2. Heat oil on griddle or in large skillet until hot. Spread about 1/4 cup batter on griddle for each pancake. Cook on medium-high heat 2 minutes on each side until crispy; keep warm. Add more oil to griddle, if necessary. Serve 
 
  with applesauce if desired.
