Remember how last month I mentioned that we're selling our house and trying to keep our new oven looking new by not using it? As of writing, we are still selling our house. It's summer, though, so 'tis the season for grillin' and chillin'.

Super Easy Salmon Packets

This recipe is so easy because the kids can help.  For each serving, you will need:

1 square of heavy duty aluminum foil
1 "portion" of salmon (we used the individually wrapped kind from the freezer section)
1/2 c frozen tater tots
1 c chopped kale
Salt & lemon pepper to taste
1 T lemon juice

Spray each square of foil with nonstick cooking spray. Place salmon in center of foil, then top with tater tots and kale. Sprinkle with salt, lemon pepper, and lemon juice. Pinch corners of foil together above packet contents, then pinch edges together to create an air-filled pocket (this will help steam the contents). Grill over medium heat for about 10 minutes or until salmon flakes easily with fork and tater tots are cooked through (you'll be surprised at how well they brown up for you). Remove from heat and keep closed for five minutes before serving.

When you're done, just toss the foil. See? Super easy!
