Monica Portogallo's quick and easy sandwich recipe hits the spot, even without the meat.

One meatless Friday, I had a craving for a hot chicken sandwich with caramelized onions and sauteed mushrooms. In a pinch, I came up with these tasty sandwiches, and they hit the spot, even without the meat. Plus, since Swiss cheese is lower in sodium than most cheeses, this recipe can easily adapt for those on low-sodium diets. I included low sodium adaptations in brackets.

Toasted Mushroom Melt Sandwiches

 
Ingredients

1 sweet onion, sliced
1 cup sliced fresh mushrooms
2 tablespoons [cooking oil], butter, or tub margarine
8 slices [low sodium] whole wheat bread
8 slices Swiss cheese

Directions
  1. Preheat oven to 400℉.
  2. Heat oil/butter in a pan over medium heat. Add onions and mushrooms to the pan and sauté until onions start to turn golden brown, about 7-10 minutes.
  3. Place 4 slices of bread on a baking sheet and add a slice of cheese to each. Divide the mushroom and onion mixture evenly between the 4 slices of bread. Add another slice of cheese to each of the 4 slices of bread, then top with another slice of bread.
  4. Place the baking sheet in the oven and bake for about 10 minutes, or until cheese is melted and bread is toasted.
