
Friday of Easter Week is not a Meatless Friday; Sr. Christina shares a fun, family-friendly recipe to use up the last of the Easter ham.
This recipe is an old family favorite! It was shared with my mom by a good friend more than 30 years ago. This is a great way to use up leftover Easter ham!
Ham, Cheese, and Broccoli Muffins
INGREDIENTS
1 pkg. (turkey) ham, or proportionate amount of other ham, diced
1 block mozzarella cheese, diced
1 block colby jack cheese, diced
1 bag frozen broccoli cutlets
2 tubes croissant dough
Directions
Preheat oven to 350 degrees.
Mix ham, cheese, and broccoli in large bowl. Set aside.
Grease 2 muffin tins.
Open dough tubes, rolling out individual triangles to fit on muffin tin holes. Put one triangle over each of the holes. Push down gently in middle of each to make room for stuffing.
Stuff with handfuls of diced mixture, closing each by pulling up each corner of the triangle. Seal as best as possible. Bake for 20 minutes, or until golden.
Remove from oven and let set for a few minutes. Enjoy!
Makes 16 muffins.
