These Thai noodle bowls are a cross between pad Thai and my Thai peanut salad. They are loaded with colorful veggies, high in protein, and, of course, filled with noodles. This recipe makes a lot of food! It's perfect for a veggie-forward meal prep, a delicious and versatile bowl, served hot or cold. Best of all, it's ready in less than 30 minutes!
