For Meatless Friday, air fry these simple 6-ingredient salmon patties.
Fish patties are a simple, frugal, and surprisingly versatile way to serve a meatless meal. You can slide them into a sandwich with your favorite toppings, slice them in quarters and fold them into tacos, or serve them alongside a green salad.
When I have leftover fish in the fridge, I like to make these easy fish patties in the air fryer.
Air Fryer Fish Patties
Makes 4 patties
Ingredients
10-12 oz. leftover cooked fish, flaked (canned salmon works also)
2 tbsp fresh cilantro, chopped
3 tbsp Thai sweet chili sauce
2 tbsp mayonnaise
1 egg, beaten
2/3 cup bread crumbs (I use seasoned bread crumbs for this recipe)
Directions
Combine all ingredients in a large bowl and shape into 4 patties. Coat with baking spray.
Spray bottom of air fryer basket with baking spray, or cut a piece of baking parchment a little smaller than your air fryer basket and use a hole punch to perforate it. Place in air fryer basket. Add patties to air fryer.
Bake at 400° for 9 to 10 minutes.
