Cinco de Mayo is next week, so now's the time to stock up on everything you need to make tacos at home: Tortillas, beans, cheese, and sometimes even lettuce, tomatoes, and cilantro can be found on sale. Try some of our favorite varieties of tacos!

It's quicker to make fish tacos than the beef variety! We started with boxed fish burgers, added a little spice, then chopped them up and folded them into tortillas, along with lettuce and fresh pico de gallo. If I get the chance, I'll mix up the pico de gallo a little earlier in the day, but there's no harm done if I don't get to that until I'm preparing the rest of the meal. These are a crowd-pleaser, and easy to make for a crowd, too!

This recipe is a fun alternative to tacos. These do not taste like your typical taco made with seasoning that's heavy on the chili powder, but they're a delicious meatless taco. My young-adult son helped me make this dinner and particularly enjoyed charring the corn tortillas over an open flame.
