We talked about [chili](https://www.catholicmom.com/articles/meatless-friday-cornbread-dumplings) a few weeks ago, but there are many more meatless recipes we find ourselves cooking during this time of year. Take advantage of seasonal ingredients (they're less expensive) or even leftovers, and make a thrifty, tasty meal. There's even a breakfast-for-dinner option!
